When I worked for Google (at the NYC office), every day I looked forward to my daily trek to the Water Tower cafe where I’d pick up a hefty helping of their famous avocado salad. When I left Google to start Studio Simpatico in 2014, I immediately added a high priority task to my to do list: figure out how to re-create this masterpiece so I could enjoy it at home.
Ingredients
- 3 cups Kale
- 1 small Avocado
- 1 Lemon
- 1 tbsp Olive Oil
- 2 tsp Himalayan Salt
- 2 tbsp Dried Cranberries
Instructions
Chop kale. Massage avocado, lemon juice (squeezed from lemon), and olive oil into kale. Add salt and cranberries. Toss and enjoy!
